Wednesday Recipe: Breakfast Avocado Toast



½ small avocado
2 slices of bread (for tastiest results, use a wide loaf from a bakery, not prepackaged from the bread aisle)
Cooking spray
1 large egg
Salt & pepper to taste
Paprika to taste
1 ounce goat cheese crumbles (or to taste)


  1. Mash avocado in a bowl, season with salt and pepper
  2. Heat a small nonstick skillet over low heat, spray with oil and gently crack the egg into the skillet. Cover and cook to your liking, seasoning with salt and pepper halfway through.
  3. While the egg is cooking, toast bread. Spread avocado over toasted bread, and season with paprika.
  4. Add goat cheese crumbles and when the egg is finished, place it gently on top of toast.
  5. Enjoy!
