Wednesday Recipe: Pumpkin Bars with Cream Cheese Frosting



  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 teaspoon cinnamon
  • 1 cup oil
  • 3 eggs
  • 2 cups pumpkin (1 small can)


  • 8 ounce cream cheese, 2 packages
  • 1 stick butter
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar


  • Stir the wet ingredients in a bowl until well mixed.
  • Stir the dry ingredients together in a separate bowl and then add to the wet mixture. Pour the mixture into an ungreased pan. Combine all the ingredients for the cake in a mixing bowl and bake at 350 degrees until done or approximately 25 - 30 minutes.
  • While the cake is in the oven, mix the cream cheese and butter together and then add in the vanilla extract. Lastly, slowly mix in the powdered sugar to the softened cream cheese and butter mixture until you have a smooth frosting texture.
  •  Once the cake is cooled, add the frosting, slice and serve.
